Delightful, flaky and tasty, these Mango Cardamom cookies are absolutely drool worthy. This summer season, yet another excuse to gorge on this delectable fruit. Infused with cardamom, these cookies are definitely worth a try

I have love for mangoes and paired with cardamom , any dessert tastes heavenly. Now I can never get enough of mangoes so when summer comes in , I find excuses to devour this fruit in all kinds of desserts.

*Adjust cardamom powder as per taste, adding Mango essence enhances the taste of the cookies

**Do not make cookies thick, it will be cakey. If you make it too thin then it will become hard

***Add chopped nuts if required. You can freeze the cookie dough upto 2 months

Servings: 5-6

Ingredients

  • 11/4 cup + 2 tbsp APF
  • 3 tbsp Corn flour
  • 2 tbsp Milk powder
  • 4 tbsp Mango Puree
  • 1/2 cup castor /powdered sugar
  • 110 g soft unsalted butter
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • Mango essence- few drops – optional
  • Pinch of Saffron color – optional

Steps to prepare

  • Sieve APF, Corn flour, milk powder, cardamom powder, salt, baking powder in a bowl and keep it aside
  • In a bowl, blend butter for 30 seconds
  • Add sugar and beat until creamy and fluffy
  • Add Mango puree and Mango essence, blend well
  • Add saffron color if required
  • Now add dry ingredients and mix well to form very soft dough
  • Cling wrap the dough and chill for 30 mins
  • Preheat Oven to 180 deg cel and line baking tray with parchment paper
  • Scoop out the dough with ice cream scoop or spoon, drop them on baking tray leaving gap between them
  • Gently flatten the cookies. Do not flatten too much
  • Bake for 11-13 minutes until golden brown
  • Cool on the tray for 10 minutes
  • Cool on the wire rack completely
  • Store in airtight container and munch on as desired
