Enriched with the goodness of Oatmeal, honey, Almonds,Peanut butter, Coconut, dry fruits and Dark chocolate, this lock-down season , its time to gorge on something healthy, filling and delicious in taste. Healthy need not be boring, it could be equally interesting and delectable in taste
With the lockdown, I was facing issues with my weight management, I kept reaching for some or the other junk food, when I decided it was time for me to prepare something healthy to satiate my boredom/hunger cravings

I have prepared peanut butter chocolate bars in the past however this time I added whatever healthy ingredients I could find in my pantry and voila π :D, its yet another delectable delicious snack to munch on. I am sure I would have mentioned this 100 times in the past that I am fond of dark chocolate so yes I added dark chocolate glaze on the top, you can prepare healthy sauce from cocoa powder too and add it as glaze. Now nothing makes dessert or food as delicious as Chocolate does π

*Add raisins, cranberrries, strawberries etc as desired, basically you can play around with the ingredients
**Dark Chocolate though healthy shouldn’t be consumed in excess so yes you can adjust the quantity of dark chocolate as desired
**I have skipped the flavoring , you can add in vanilla, almond etc essence also for additional flavouring
***Adjust the quantity of honey as desired

Ingredients
- 180 g roasted rolled Oats
- 180 g – 240 g Dark Chocolate Chopped , adjust
- 120 g creamy or crunchy peanut butter
- 2-4 tbsp creamy peanut butter
- 1/2 cup almonds, peeled
- 1/4 cup desiccated/flakes of coconut
- 2 tbsp coconut oil/low fat butter
- 1/4 cup Honey/Maple syrup
- 1/3 cup Walnuts/Apricots chopped/raisins etc
- 1/4 teaspoon salt
- 1 tsp Vanilla/Almond essence etc – optional
Steps to prepare
- Grease 8 inch square pan and line with parchment paper. This will help in easing the bars out of the pan
- Grind Oats, almonds, apricots, coconut, walnuts, salt to form fine powder
- In a saucepan, add peanut butter and coconut oil
- Over low medium heat, mix them until well combined
- Now take them off from the heat , add honey and mix well
- Add this mixture to the ground Oats mixture and blend until well combined
- Add the mixture to the prepared pan
- Using clean wet hands or spoon , level this mixture
- Keep the square tin aside
- In a bowl, add chocolate and 2-4 tbsp peanut butter
- Using double boiler or microwave, melt the chocolate
- Mix well until no lumps. Now pour the chocolate mix over Oatmeal layer
- Level the chocolate evenly
- Refrigerate for 2 hours or until chocolate is set
- Now ease the bars out of the pan with the help of parchment paper
- Using clean hot knife slice them into bars
- Remember to clean the knife after each cut else the cuts will become messy
- Gorge on this delectable bars. Store leftovers in air tight container and refrigerate
