Easy to make, dairy free, eggless, and gluten free, these delicious Mango buckwheat cookies are certainly worth a try. Buckwheat is high in protein and minerals so here comes in Cookies which is Gluten free and replaces unhealthy refined flour and mango enhances it flavor. I have added on top for additional taste and these cookies were awesome in taste

I have tried different brands of Buckwheat (Kuttu ka atta) flour, while some are good , few were bitter. So, yes, flour does affect the taste of the cookies so make sure you use a good quality buckwheat flour. Buckwheat flour is an acquired taste so In case you do not have buckwheat flour, you can easily use Amaranth or Water chestnut flour too as replacement

Notes:

*Use good quality Buckwheat flour, else cookies will taste slightly bitter

*Adjust sweetness of the cookies as per the sweetness of the mango puree, for more stronger taste, add few drops of mango essence if desired

**Do not shape the cookies into thick/fat cookies else you would end up with cakey centers

**Since it already contains leavening agent, it will puff up while baking so it’s best to flatten them and cool cookie dough will prevent it from spreading while baking

**For more crisp texture, just bake them additionally, 4-6 min at reduced temp of 150 deg Celsius. Do not over bake these cookies else it would become dry

*** For vegan version, use coconut oil , however, this can also alter the taste of the cookies

Preparation time:10 mins Baking time:12 mins Total time: 22 mins

Servings: 14 cookies

Ingredients

1 cup = 240 ml

  • 1 cup Buckwheat flour
  • 75g unsalted Butter, melted and slightly cooled
  • 6 tbsp. Sugar , adjust
  • 4 tbsp. Mango Puree
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking powder
  • Nuts for garnish – optional

Steps to prepare

*Do read notes before preparation

  • Sieve buckwheat flour, salt and baking powder in a bowl and keep it aside
  • In a bowl, add butter and sugar. Mix until well combined
  • Now add mango puree and mix well
  • Add dry ingredients and mix until it comes together to form a dough
  • Transfer the dough to cling wrap, and wrap it completely
  • Chill the dough for 1 hour
  • Preheat oven to 170 deg. Celsius. Line baking tray with parchment paper
  • Using ice-cream scoop or spoon , make dough balls
  • Flatten the dough balls and place them on baking tray leaving gap between them
  • Bake for 12-14 minutes until golden brown
  • Cool the cookies in the tray for 8-10 minutes
  • Cool them on wire rack completely
  • Store cookies in airtight container
  • Serve delicious Mango Buckwheat cookies
