Healthy, delicious, eggless and simple to prepare, this season munch on these Sugar free , dairy free Mango Muffins.

If you are a Mango addict just like me, then you definitely need to prepare these muffins. Now I have made these muffins with All purpose flour (Maida) in the past and they tasted awesome. However , this time, I wanted to make this with WWF and yes it does taste good. Whole wheat flour in muffins/cakes/cupcakes is like an acquired taste so if you dislike the taste then you can mix half of WWF with APF.

While Cupcakes has to be sweet, muffins needn’t so I planned to prepare Muffins which will completely rely on the sweetness of Honey and Mangoes. I wanted to skip the sugar and yes, these tasted delicious without sugar. Cardamom and nuts bring in additional taste to these muffins, so it’s recommended to add them. If you do not have honey, you can also use Dates Syrup or Maple syrup instead. Again, it’s best to prepare Dates syrup at home, store brought ones will be loaded with sugar

Notes

*Instead of whole wheat flour, all purpose flour(APF) / Maida can also be used OR you can use 1/2 cup wheat flour and 1/2 cup APF

**Instead of Honey, Maple syrup/Dates Syrup/Agave can also be used

***Sweetness of the muffins will also depend on the sweetness of Mango puree, so use good quality mangoes like Alphonso or similar

***Batter would be thick, if it’s too thick, only then just add additional 1-2 tbsp. Mango puree

Servings: 6 muffins

Ingredients

1 cup = 240 ml

  • 1 cup whole wheat flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Cardamom powder – optional
  • 10 tbsp. Mango puree
  • 6 tbsp. Honey
  • 3 tbsp. Oil
  • 4-5 tbsp. chopped Nuts (optional)

Steps to prepare

Do read the notes before preparation

  • Preheat Oven to 170 degree Celsius and line muffin tray
  • Sieve flour, baking powder, salt and cardamom in a bowl and keep it aside
  • In a bowl, mix oil, honey, and mango puree well
  • Gradually add these wet ingredients to dry ingredients and mix until just combined
  • Add 4 tbsp. chopped nuts and mix. Do not over mix the batter
  • Pour the batter into prepared muffin tray and level evenly
  • Garnish the tops with 1 tbsp. chopped nuts if desired
  • Bake for 18-22 minutes until golden brown and puffed up
  • Cool for 10 minutes in the tray and then cool for another 10 – 15 minutes
  • These muffins taste best when served warm. Drizzle honey on top if desired
  • Store leftovers in air tight container and refrigerate. Just before serving , warm it up and serve
