With the festive season around the corner, it’s time to munch on something healthy and guilt free.
Diwali is in which means it’s time to gorge on snacks and sweets, and once the festivities are over, I am sure just like myself, you would also end up screaming once you stand on weighing machine 🙂 , so this Diwali, I decided, it was time for me to eat something sweet without feeling guilty about it
Dates are a good source of various vitamins and minerals, energy, sugar, and fiber. It has low glycemic index hence can be consumed safely by Diabetic patients too. Dates are good for pregnant women and kids. Buckwheat is a highly nutritious whole grain that many people consider to be a superfood. Buckwheat is a good source of protein, fiber, and energy so yes when these two come together , you get absolutely healthy and nutritious laddus/balls

Notes:
* Use premium quality dates only. Adjust the water based on quality of dates
**If the mixture is dry, only then add ghee/milk/water to loosen up the mixture
***If the mixture has high moisture content and you are unable too shape them, then add little desiccated coconut to mixture and mix well
***Instead of ghee, nut butter or extra virgin coconut oil can also be used

Ingredients
1 cup= 240 ml
- 1 cup Buckwheat Flour
- 18-20 DatesÂ
- 1/2 cup – 3/4 cup Water
- 4 -6 teaspoon Ghee (Clarified Butter)
- 4-5 tbsp chopped roasted nuts (Almonds, cashews etc.) – (optional)
- 1/3 cup Desiccated Coconut – optional
Steps to prepare
*Always read the notes before preparation
- Deseed and finely chop the dates
- Add chopped dates and water in a pan
- Stir well on low-medium flame.
- Once the water is absorbed and dates becomes mushy, keep it aside
- Ground dates to smooth puree
- Heat ghee in a pan and add buckwheat flour
- Roast flour over low flame until its aromatic. This step is important as we do not want to eat raw flour and neither burnt flour. Always sauté over low medium heat
- Add ground dates and nuts and mix until well combined
- Stir for 2 mins on low flame and switch off the heat
- Allow mixture to cool completely and refrigerate for 35-45 minutes
- Grease palms and shape the mixture into laddus/balls
- Roll the laddus over desiccated coconut until its well covered
- Refrigerate for 1 hour
- Healthy Buckwheat Dates Laddus/Balls are ready to be served
- Store leftovers in airtight container and refrigerate
- Consume within 4 days
